GINGER BEEF & BROCCOLI STIR-FRY

 

Tender beef strips and crisp-tender vegetables in a light ginger and garlic sauce.

Serves 2 | About 25 minutes

INGREDIENTS:

• 2 teaspoons Just Ghee Original Ghee, divided
• 300g sirloin steak, thinly sliced across the grain
• 200g broccoli, cut into small florets
• 1 red pepper, thinly sliced
• 1 teaspoon grated fresh ginger
• 1 garlic clove, finely chopped
• 1 tablespoon reduced-salt soy sauce
• 1 teaspoon cornflour
• 75ml water, plus a splash for cooking
• A squeeze of lime
• Black pepper, to taste

METHOD:

1. Mix the soy sauce, cornflour and 75ml water in a small bowl.

2. Heat 1 teaspoon of ghee in a large non-stick frying pan over medium-high heat. Cook the beef in two batches for 2–3 minutes each, turning until browned on all sides. Transfer to a clean plate.

3. Reduce the heat to medium. Add the remaining ghee, ginger and garlic, and stir for 30 seconds.

4. Add the broccoli, red pepper and a splash of water. Cover and cook for 3–4 minutes until just tender.

5. Return the beef and its juices to the pan. Stir the prepared sauce again, then pour it in.

a. Simmer for 2–3 minutes, stirring, until the sauce lightly coats everything and the beef is cooked through.

b. Finish with lime juice and black pepper.

Serve straight away with basmati rice.

GHEE TIP
Let the ghee heat before adding the beef, but avoid letting it smoke. Cooking in batches helps the beef brown evenly.
